If you are a food operator then you should know about these things. The FSSAI is a food authority of India which requires the food safety and food quality from the food operators for the sake of the normal people so that the food that the people eat remains safe and healthy.
The FSSAI authority that is the Food Safety and Standards Authority of India is launching RUCO (Repurpose Used Cooking Oil) and the cooking oil will be used in an environment-friendly way.
To take part in this process a Food Business Operators must have a Food License and the organization should apply for the FSSAI Registration in India.
#What is RUCO (Repurpose Used Cooking Oil)?
The Re-purpose Used Cooking Oil is basically cooking oil which is converted into bio diesel that can be used in vehicles. After repeated frying of the food products in the oil, it increases the number of total polar compounds in the oil. Due to the increase of the total polar compounds in the oil, the oil becomes toxic and it can cause atherosclerosis, hypertension and liver diseases in human beings. Hence the quality of the oil is monitored during frying the food products as it can get toxic due to repeated frying.
The FSSAI authority has set a limit on the polar compounds at 25% and if the limit exceeds above the 25% then it becomes toxic and it cannot be reused for cooking of the food products. All the Food Business Operators(FBO's) are required to monitor the quality of the cooking oil from the 1st of July 2018. So it is compulsory for the Food Business Operators to monitor the quality according the laws of the Food Safety and Standards Authority of India. So to reuse the cooking oil, the used oil will be converted into bio-diesel and used in vehicles.
From 50 liters of oil that is used for the cooking results in 10 liters of wastage of oil and the polar compound in the oil gets increased and Hence, the 10 liters of oil can be reused for cooking and frying of the food products.
Some of the eateries use the frying oil in a bulk amount and then sell the used oil to the small eateries and sometimes the eateries do not dispose of the cooking oil in the right manner and it can cause hazardous effects on nature. So to avoid the reuse of the used cooking oil, the Re-purpose Used Cooking Oil concept is introduced by the Food Safety and Standards Authority of India.
The Food Safety and Standards Authority of India(FSSAI) is collecting the used cooking oil from the various Food Business Operators situated in India. More than 4 Lakh Litre of oil is distributed from Madurai to the southern districts to convert the cooking oil into the bio-diesel. The FSSAI had collected the reports of the purchasing customers in Madurai that buy the oil in bulk amount and the oil will be collected from that organization and companies.
